Tips

Smoothhound

Peeler crab is the bait, on a strong 4/0 and at least a 40lb trace. Fish the drag light or the reel on the ratchet: a hound will pull a rod in. Calm, muggy evening floods on big tides are best.

How to cook it

Edible, but nearly everyone returns them. They breed slowly. Simple ways to cook it at home. More on bleeding, gutting, filleting and freezing in From sea to plate.

Method 1

Pan-fried steaks

Most anglers return smoothhound, which breed slowly. If you keep one, skin it, cut it into steaks and fry in a little oil for 3 to 4 minutes a side.
